day one

Well, this is it. Day one of my gluten free vegan diet. I feel like shit, but not because of what I'm eating. My stomach has been bothering me all night. I'm dreading the withdrawals from sugar and caffeine. My, I can just see it now. I'm determined to pull through, though. I have to. I need this change, to be truly healthy.

So far today I have learned that I can't eat broccoli raw if it's plain. In fact, I can only eat celery and carrots raw and plain. This is going to make lunch times interesting, and I'll have to get more creative with ideas.

I've decided to give tofu a whirl. I needed something extra, something I could cook up with veggies for dinner. If I get bored, I'm bound to quit. I made sure it was organic, gmo and gluten free. I also bought sauce to cook  with that is organic and gluten free. Oh, and extra virgin olive oil. Good grief that stuff is expensive! It better last me a while.

So really nothing exciting to share today. I'm going to eat my orange to finish up lunch and then get started on the dishes. I was hoping to have today to do nothing all day, but that's not how it turned out. Oh well. Better luck next weekend!
